Yet Another Corn Bread!

Many Years ago,having quit smoking and gained weight(alot of it!),my diet geared towards salads in whole wheat pita bread.Wondering how pita was made,took a trip the library,now faced with an entire wall of 'Bread Books',feeling a bit overwhelmed,chose the fattest one.This was Bernard Clayton's Book Of Breads,a comprehensive collection of breads from around the world,and yes a pita recipe.Thoroughly impressed with the enormous amount of bread recipes I began,though not with the pita,which came later,much later, others sounded much more interesting and doable,being no stranger to the kitchen ,so began the journey.
 Always having been a corn bread,corn muffin,corn fritter lover,the corn bread recipe sounded awesome,full of all the foods I love,onions,cheese,corn,hot peppers wow, gotta make this!And It was awesome,moist cheesey,onioney,slightly spicy hot,good good good!
The 10th BBA challenge Corn Bread recipe reminded me of this one, I must share it with the rest of  the corn bread lovers out there!
I adapted it slightly,less heat,of course you may increase it to your preference,and using whole milk,and minced onions.

Jalapeno Corn Bread

1 1/4 cups yellow corn meal
1/2 cup all purpose flour
1 tbs sugar
2 tsp baking powder
1 1/2 tsp salt
1 egg+ 1 egg yolk
3/4 cup warm milk
1/4 cup vegetable oil
8 oz can cream style corn
1 - 2 jalapeno  peppers (or to taste) ,seeded ,chopped
1 cup grated sharp cheddar cheese
1/2 large onion finely minced
9x9 baking pan greased
oven 425 degrees
 Mix all the dry ingredients, beat egg and yolk,add to milk,add oil,mix,add to corn meal mix,stir in corn,onions,peppers,cheese.
Pour into prepared pan,smooth level.
bake 30 minutes or until tests dry with a toothpick
  NOTE: WHEN HANDLING ANY HOT PEPPERS WEAR DISPOSABLE GLOVES,THE ACID IN THE PEPPERS CAN CAUSE SEVERE BURNS TO THE EYES,LIPS AND WILL NOT NECESSARILY WASH OFF COMPLETELY FROM HANDS,IN ADDITION THE CUTTING BOARD WILL HAVE SOME HEAT LEFT ON IT ALSO.THIS APPLIES TO HANDLING WHEN BUYING, I USE ONE OF THE STORE PLASTIC BAGS AS A GLOVE.

A sad true story,My cousin's Mother in law ,as a child helping to prepare hot peppers with her mother rubbed her eyes,She is now blind in one eye.

  1. I like the idea of adding the peppers to the cornbread. What a terrifying story though abut your cousins Mother in law. Thanks for the warning, I'll be discussing that at work tomorrow.

  2. That recipe sounds really good. I am thinking the next time I make cornbread I will try it. I have a huge batch of muffins still. In fact, my freezer is bulging with different breads.

    I didn't know that you could go blind from that, and will make sure I tell my daughter who loves spicy food. I usually buy canned peppers, except the sweet kind.

  3. The unfortunate accident was as a child,she must have had a lot of the hot pepper juice on her fingers.The amount of acid was strong enough to burn thriugh her cornea and eye.
    Most aduls would be aware not to touch their eyes when chopping onions and hot peppers,but not all know just how dangerous it could be.
