Angel Hair Pasta, With Veggies In Brandy Cream sauce

I love pasta, any and all types, being Italian, we had pasta often, with beans, veggies, tomato sauce, on and on.My wife asked what we were going to have for dinner, of course, I replied PASTA! OK was her  less then  enthusiastic reply, how she asked, now I'm on the spot, what to create that SHE would like, I would be happy with any pasta dish.WE haven't been eating as much veggies as we should have been, so it's pasta and veggies I said. Yeah, how was her response. With veggies in a sauce of some kind,at that point she seemed content I would  make something good. i made angel hair pasta with sauteed veggies in a brandy cream sauce, a bit over the top for a Monday,but what the heck,I just thought of it, so I had to make it!
 I did I say it was deliciously great! This is what you'll need........

1/2 large red onion sliced in half moon rings
2 carrots, julienned  ( use my titan julienner)
1 med zucchini julienned ( I stop at the inner seed pocket using only the outer flesh)
1 small broccoli head cut into florets
2 cloves roasted garlic  (method at bottom)
2 cloves thinly sliced garlic (3 if you don't have roasted garlic) 
2 tbsp chopped fresh Italian parsley
3 basil leaves chopped
2 - 4 tbsp unsalted butter
2tbsp olive oil
1/4 cup brandy ( I prefer korbel )
1/2 cup heavy cream
 1 14 oz can lo sodium chicken broth
angel hair pasta about 1/3 box ( prefer barilla)
 Let's get started!.............


cut broccoli into florets,slice garlic,chop roasted garlic,slice red onion,julienne veggies ( I use a Titan peeler julienner)
in oil and butter,saute onions till soft,add garlics saute till fragrant,
meanwhile cook broccoli in pasta water till crisp tender,scoop out and run under cold water to stop the cooking,reserve
add carrots cook till crisp tender,add zucchini cook 1-2 minutes, remove all from pan to a warm plate
remove pan from stove, add brandy, ignite OFF stove ,return to stove when flames die ,continue to cook till almost gone,add chicken broth,reduce by half,add cream ,cook till desired consistency,return veggies to pan and heat through
place cooked angel hair pasta on plates,top with veggies and cream sauce,sprinkle on chopped fresh Italian parsley and  fresh basil!  Pass Reggie Parm!        ENJOY!

  1. That looks and sound delishious!!! I have never tried a cream sauce with brandy on my pasta and I eat alot of pasta :)
